Bamboo rice is special rice that is grown out of a dying bamboo shoot :In saucepan add 2 ½ cups of water or vegetable stock. Add 1 cup of rice (do not rinse rice) and a pinch of salt to a medium pot and stir. Bring to a boil (about ⅚ minutes) and then lower the heat. Give the rice a minute for the boiling liquid to reduce to a simmer before putting the lid on to keep the rice from boiling Cover with the lid on and simmer for 20 minutes or until rice is sticky yet fluffy. Turn off the heat, let the rice steamed in the covered pot for at least another 5 minutes or until the rice has absorbed all the liquid.

• Bring 1 1/2 cups water to a boil in a medium saucepan. Reduce heat to a simmer, cover, and cook until rice is tender and has absorbed all the liquid, 16 to 18 minutes (check only toward the end of cooking time). Remove from heat and let steam, covered, for 10 minutes
